A full compliment of trays and lids come with the bain marie. For extra trays and lids you can order them with your bain marie. All prices are per day. Wet vs Dry Bain Marie trays explained: Wet trays – these use a water bath beneath the food pans to gently heat food. They are best for sauces, soups and stews. They provide an even heat distribution and retain moisture. Dry trays – these use direct heat from an element under the food pans. They are best for fried food, pastries, and short service periods. They heat quickly and are easier to clean. Pick up or delivered on Friday, and returned on Monday morning is the price of a 1 day hire!
