Wet vs Dry Bain Maries explained
Wet trays – these use a water bath beneath the food pans to gently heat food. They are best for sauces, soups and stews. They provide an even heat distribution and retain moisture.
Dry trays – these use direct heat from an element under the food pans. They are best for fried food, pastries, and short service periods. They heat quickly and are easier to clean.
6m x 3m marquees
Two 3m x 3m marquees can be put together to create a 6m x 3m space. The 6×3 metre size comfortably accommodates seating, buffet tables or standing guests without overwhelming smaller spaces.
Dry bars
Dry bars are great for parties, events and gatherings. We have a variety of colours of covers for the dry bars.
